Semolina Pudding (Rava)

                     Semolina gives way for many sweet dishes...Its easy preparation, pleasant taste when sweetened & high versatility makes this fibre-rich ingredient very popular & special !!!....
I was inspired by this easy recipe from one of my friends in facebook..thanks to Monica Deepak...


1.Semolina(Rava)-3 tbsp
2.Milk-2 cup
3.Sugar-6 to 7 tbsp
5.Ghee-1 1/2 tbsp
6.Coconut(grated)-2 1/2 tbsp
7.Vanilla essence-2 tbsp

~This pudding can be prepared in pressure cooker or an idli cooker...So be prepared with a steel vessel (in which to cook the pudding )which can be placed inside this...since you have to steam cook this pudding..

Caramel Preparation

~Heat a pan & add 2 tbsp water & 2 1/2 tbsp sugar.
~Stir it well until it becomes brown..(Control the flame otherwise chances that it will get burnt.)
~ Once done, pour it into the vessel you are about to make the pudding.
~Keep it aside to cool & become firm..

Semolina Preparation

~Take another pan then add milk , semolina , ghee , sugar then place it on flame.
~Stir well & cook it until rava(semolina) is properly cooked & the mixture becomes thick.
~After that keep it aside till the mixture comes to room temperature..
~Mix eggs , grated coconut and vanilla essence in a blender.
~Mix the semolina mix and egg mix properly and pour it in to the caramelised vessel and close it with a lid .

Pudding Preparation

~Pour water in the idli cooker or pressure cooker.
~Place a steel plate/ lid / small steel vessel inside the cooker.(any one)
~Place the vessel containing mix on top of this inside the cooker.
~Water should not reach more than half of the vessel containing the mix...(Make sure while boiling the water wont get inside the mixture)...

~If using a pressure cooker no need to put the weight. 
~If using idli cooker you can cover it.

~Cook for about 45 mins. 
~In pressure cooker, once the pressure start coming reduce the flame to medium. 
~In idli vessel use high flame & can adjust  if needed .
~Once cooked, remove the vessel from the cooker & let it cool.
~Take a plate where you are going to arrange the pudding.
~After removing the lid of the vessel containing the pudding, keep the plate on the top of the vessel containing pudding and turn it upside down.
~Then the caramelised part will be on top.
~ Now refrigerate it..

So a creamy mouthwatering pudding is ready !!!
